This dish is the perfect healthy supper to a long and tiring day. I prefer to make my own meatballs, but you may use made store bought meatballs as well.
This recipe uses frozen green peas, but you may substitute with potatoes-which I will be trying next time.
500g meat balls
1 packet frozen green peas
1 medium onion, chopped
2 cloves of garlic, minced
1 can of canned tomatoes, chopped
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp chili powder or 2 small chilies crushed
1/2 tsp pepper
Place the meatballs on a non-stick baking pan and bake for 30 minutes at 350 F.
While the balls are baking, heat 2 tbsp olive oil in a dish pot, fry the onion until soft and transparent.
Add in the minced garlic. Gently fry making sure not to color.
Throw in the chopped canned tomatoes and all the spices. Add water until desired consistency.
Add in the frozen peas, cover and let simmer 5-10 minutes.
Add in the meat balls, return cover and leave simmering for 40 minutes (this step allows all the flavors to incorporate), stirring every so often.
Serve hot with steamed rice or by it's lonesome.
