Chicken Teshreeb

You know what I love about Traditional Iraqi Cooking? Everything. Its relatively easy to go about and oh boy is it delicious! Today I have to share with you Chicken Tashreeb. Which is basically like a Tagine (or stew) but with yummy Iraqi bread and white rice. If you're a stickler for food especially for meats like me, you can make a meal of the bread and sauce alone-you won't regret it believe me.


1 chicken (1-1.5 kg)
4 onions
2-3 dried lemons
1.5  tsp salt
1 heaped tsp madras curry spice
3/4 tsp turmeric
3/4 tsp white pepper
1/2 tsp chili
Iraqi bread


Fry the chicken until golden on all sides.
Add the chopped onions, spices and dried lemon.

Add boiled water until chicken is just covered.
Bring to a boil, reduce heat. Leave simmering covered, for 1 hour and a half.

Meanwhile boil white rice.
When the chicken is done, prepare the designated serving dish.
Tear the bread into medium sized pieces. Add the rice on top of the bread, arrange the chicken pieces on top of the rice and pour the stew on top of it all.
Serve hot.
