I love garlic. There, I said it. I love garlic in all its forms. Grilled, baked, pureed- you name it! Not only is garlic a natural anti-biotic, anti-oxidant, aphrodisiac and reduces cholesterol- it tastes so darn tootin' good!
So ladies, man up and start eating garlic. <= Love my oxymoron right there ;)
This garlic chicken is both healthy and full of flavor. The procedure is done in two stages,
Step one- marinating, immersing the chicken in a garlic/yogurt marinade which needs to be refrigerated overnight.
Step two: coating the chicken with a bread crumb and parmesan mixture. You can totally skip the parmesan and use only breadcrumbs...but why would you want to? I didn't, because cheese :D
3-4 skinless, boneless chicken breasts
1 cup yogurt
6 cloves garlic, crushed
1 cup bread crumbs
1/2 cup parmesan
salt & pepper
In a shallow dish or sealable plastic bag, mix the yogurt and the garlic. Add a dash of salt and pepper.
Coat the chicken breasts entirely in the yogurt mixture. Cover well and refrigerate over night.
Heat oven to 375 F.
Mix the parmesan and the breadcrumbs in a wide, shallow dish. Remove the chicken one by one and dip to coat evenly in the bread mixture.
Place in a lightly greased baking tray and cook for 45 minutes to 1 hour uncovered.
Serve hot, serves 3-4.
